Ingredients

- 2 cups all-purpose flour
- 1 cup almonds, chopped
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder

Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, baking powder, and salt.
- In another bowl, whisk eggs and sugar until light.
- Add vanilla extract to the egg mixture.
- Combine the dry ingredients with the wet ingredients.
- Fold in chopped almonds.
- Form the dough into a log on a baking sheet.
- Bake for 25 minutes, then slice the log into biscotti pieces.
- Return the biscotti to the oven and bake for an additional 10 minutes.
