Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter.
  3. Press the mixture into the bottom of a springform pan.
  4. In another bowl, beat cream cheese, sugar, and vanilla until smooth.
  5. Add eggs one at a time, mixing well after each.
  6. Blend in sour cream until fully combined.
  7. Pour the cream cheese mixture over the crust.
  8. Bake for 55-60 minutes, until the center is set.
  9. Let it cool completely, then refrigerate for at least 4 hours.
  10. Before serving, drizzle with caramel sauce and sprinkle pecans if desired.
