- 4 cups grated carrots
- 1 cup raisins
- 1/2 cup chopped walnuts
- 1/4 cup mayonnaise
- 2 tablespoons honey
- 1 tablespoon lemon juice
- Salt to taste
Instructions
- Grate the carrots and place them in a large bowl.
- Add raisins and walnuts to the bowl.
- In a separate bowl, mix mayonnaise, honey, lemon juice, and salt.
- Pour the dressing over the carrot mixture.
- Toss well to combine all ingredients.
- Chill in the refrigerator for 30 minutes before serving.
Notes
- Adjust sweetness by adding more or less honey.
- Can substitute walnuts with pecans.
