Ingredients

  • 2 cups fresh or frozen cherries
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1 tablespoon butter
  • 1 package pie crusts (2 crusts)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a saucepan, combine cherries, sugar, cornstarch, lemon juice, vanilla, and almond extract.
  3. Cook over medium heat until the mixture bubbles and thickens.
  4. Remove from heat and let it cool.
  5. Place one pie crust in a pie pan and fill it with the cherry mixture.
  6. Add small pieces of butter on top of the filling.
  7. Cover with the second pie crust and seal the edges.
  8. Cut slits in the top crust for steam to escape.
  9. Bake for 30-35 minutes until the crust is golden brown.

Notes

  • Serve warm or at room temperature.
  • Add whipped cream for extra flavor.
  • Store leftovers in the refrigerator.
