A festive cherry pie perfect for Christmas celebrations.
Ingredients

- 2 cups fresh or frozen cherries
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1 tablespoon butter
- 1 package pie crusts (2 crusts)
Instructions
- Preheat the oven to 425°F (220°C).
- In a saucepan, combine cherries, sugar, cornstarch, lemon juice, vanilla, and almond extract.
- Cook over medium heat until the mixture bubbles and thickens.
- Remove from heat and let it cool.
- Place one pie crust in a pie pan and fill it with the cherry mixture.
- Add small pieces of butter on top of the filling.
- Cover with the second pie crust and seal the edges.
- Cut slits in the top crust for steam to escape.
- Bake for 30-35 minutes until the crust is golden brown.
Notes
- Serve warm or at room temperature.
- Add whipped cream for extra flavor.
- Store leftovers in the refrigerator.
