  • 1/2 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1 cup chocolate chips
  • Frosting: 1/2 cup unsalted butter
  • 2 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1/2 teaspoon peppermint extract
  • Crushed peppermint candies for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add oil, buttermilk, eggs, vanilla extract, and peppermint extract to the dry ingredients.
  4. Mix until smooth. Fold in chocolate chips.
  5. Pour batter into cupcake liners, filling each about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cupcakes cool completely before frosting.
  8. For frosting, beat butter until creamy, then add powdered sugar, heavy cream, and peppermint extract.
  9. Frost cooled cupcakes and top with crushed peppermint candies.
