Delicious chocolate cupcakes with a hint of peppermint, perfect for Christmas.

- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup vegetable oil
- 1/2 cup buttermilk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1 cup chocolate chips
- Frosting: 1/2 cup unsalted butter
- 2 cups powdered sugar
- 2 tablespoons heavy cream
- 1/2 teaspoon peppermint extract
- Crushed peppermint candies for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add oil, buttermilk, eggs, vanilla extract, and peppermint extract to the dry ingredients.
- Mix until smooth. Fold in chocolate chips.
- Pour batter into cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cupcakes cool completely before frosting.
- For frosting, beat butter until creamy, then add powdered sugar, heavy cream, and peppermint extract.
- Frost cooled cupcakes and top with crushed peppermint candies.
Notes
- Store cupcakes in an airtight container.
- Use mini chocolate chips for a different texture.
