Ingredients

- 1 pre-made tart shell
- 2 cups fresh cranberries
- 1 cup sugar
- 1/4 cup water
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 tablespoon butter
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, combine cranberries, sugar, water, and lemon juice.
- Cook over medium heat until cranberries burst, about 10 minutes.
- Mix cornstarch with a little water, then add to the cranberry mixture.
- Stir until thickened, then remove from heat.
- Add butter and vanilla extract, stir to combine.
- Pour the cranberry filling into the tart shell.
- Bake for 25 minutes or until the filling is bubbly.
- Let cool before serving.
Notes
- Serve with whipped cream or ice cream.
- Can be made a day in advance.
- Store leftovers in the refrigerator.
