Ingredients

  • 1/2 cup raisins or cranberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin tin with paper liners.
  3. In a bowl, mix flour, sugar, baking powder, nutmeg, cinnamon, and salt.
  4. In another bowl, whisk together eggnog, oil, eggs, and vanilla.
  5. Combine wet and dry ingredients until just mixed.
  6. Add raisins or cranberries if desired.
  7. Fill muffin cups about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool before serving.
