A traditional Christmas fruitcake filled with dried fruits and nuts.
Ingredients

- 2 cups mixed dried fruits
- 1 cup chopped nuts
- 1 cup unsalted butter
- 1 cup brown sugar
- 4 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup orange juice
- 1/4 cup brandy
Instructions
- Preheat your oven to 325°F (160°C).
- In a large bowl, cream together butter and sugar.
- Add eggs one at a time, mixing well after each addition.
- In another bowl, combine flour, baking powder, spices, and salt.
- Gradually add the dry ingredients to the wet mixture.
- Fold in dried fruits, nuts, orange juice, and brandy.
- Pour the batter into a greased cake pan.
- Bake for 1 to 1.5 hours or until a toothpick comes out clean.
- Let it cool before serving.
Notes
- Store in an airtight container.
- For enhanced flavor, age the cake for a few weeks.
- Glaze with icing if desired.
