Delicious Christmas Gingerbread Cheesecake with a spiced gingerbread crust.

- 1 ½ cups gingerbread cookie crumbs
- ½ cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ cup sour cream
Instructions
- Preheat your oven to 325°F (163°C).
- In a bowl, mix gingerbread cookie crumbs and melted butter.
- Press the mixture into the bottom of a springform pan.
- In another bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing after each addition.
- Mix in vanilla, ginger, cinnamon, and nutmeg.
- Stir in sour cream until fully combined.
- Pour the filling over the crust.
- Bake for 55-60 minutes or until set.
- Let the cheesecake cool before refrigerating for at least 4 hours.

- For best flavor, let it chill overnight.
- Top with whipped cream or a gingerbread cookie.
