  • ½ cup sour cream

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, mix gingerbread cookie crumbs and melted butter.
  3. Press the mixture into the bottom of a springform pan.
  4. In another bowl, beat cream cheese and sugar until smooth.
  5. Add eggs one at a time, mixing after each addition.
  6. Mix in vanilla, ginger, cinnamon, and nutmeg.
  7. Stir in sour cream until fully combined.
  8. Pour the filling over the crust.
  9. Bake for 55-60 minutes or until set.
  10. Let the cheesecake cool before refrigerating for at least 4 hours.
