A succulent lamb roast perfect for Christmas celebrations.
Ingredients
Scale
- 1 leg of lamb (approx. 5 lbs)
- 4 cloves garlic, minced
- 2 tbsp rosemary, chopped
- 2 tbsp thyme, chopped
- 1/4 cup olive oil
- Salt to taste
- Pepper to taste
- 1 cup red wine
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix garlic, rosemary, thyme, olive oil, salt, and pepper.
- Rub the mixture all over the lamb.
- Place the lamb in a roasting pan.
- Pour the red wine into the bottom of the pan.
- Roast for about 1.5 hours or until the internal temperature reaches 145°F (63°C).
- Let it rest for 15 minutes before slicing.
Notes
- Adjust cooking time based on the size of the lamb.
- Use a meat thermometer for best results.
- Serve with your choice of sides.
