This Christmas Lemon Meringue Pie features a tart lemon filling topped with fluffy meringue.
Ingredients

- 1 pre-made pie crust
- 1 cup sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 1 cup water
- 3 large egg yolks, beaten
- 1/4 cup lemon juice
- 2 tablespoons butter
- 3 egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup sugar
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the pie crust according to package instructions.
- In a saucepan, combine sugar, cornstarch, and salt.
- Add water and cook over medium heat until thickened.
- Stir in egg yolks, lemon juice, and butter.
- Pour the lemon filling into the pie crust.
- In a separate bowl, beat egg whites and cream of tartar until soft peaks form.
- Gradually add sugar and beat until stiff peaks form.
- Spread meringue over the lemon filling.
- Bake for 10-12 minutes until meringue is golden.
