Delicious mini cheesecakes perfect for Christmas gatherings.
Ingredients

- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1 egg
- 1 package graham cracker crumbs
- 1/4 cup melted butter
- 1/4 cup powdered sugar
- Red and green sprinkles for decoration
Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs and melted butter.
- Press the mixture into the bottom of cupcake liners in a muffin tin.
- In another bowl, beat cream cheese, sugar, and vanilla until smooth.
- Add sour cream and egg, mix until well combined.
- Pour the cream cheese mixture over the crust in each liner.
- Bake for 20 minutes or until set.
- Let cool, then refrigerate for at least 2 hours.
- Top with powdered sugar and sprinkles before serving.
Notes
- Use a hand mixer for best results.
- Allow the cheesecakes to cool completely before refrigerating.
- Can be made a day in advance.
