A delicious Christmas morning quiche with spinach and cheese.

- 1 pie crust
- 1 cup fresh spinach, chopped
- 1 cup shredded cheese (cheddar or your choice)
- 4 large eggs
- 1 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Place the pie crust in a pie dish and pre-bake for 10 minutes.
- In a bowl, whisk together the eggs, milk, salt, and pepper.
- Spread the chopped spinach and shredded cheese evenly over the crust.
- Pour the egg mixture over the spinach and cheese.
- Bake for 30-35 minutes or until the quiche is set and lightly golden.
- Let it cool for a few minutes before slicing and serving.
Notes
- Feel free to add other ingredients like mushrooms or bacon.
- Serve warm or at room temperature.
- This quiche can be made a day ahead and reheated.
