Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, baking soda, salt, ginger, and cinnamon.
  3. In a separate bowl, cream butter and sugar until light.
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in orange juice and zest.
  6. Gradually add dry ingredients to wet ingredients.
  7. Fold in chopped crystallized ginger.
  8. Pour batter into a greased cake pan.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
  10. Let cool before serving.
