Ingredients

- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 cup orange juice
- 1 tablespoon grated orange zest
- 1/4 cup crystallized ginger, chopped
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix flour, baking powder, baking soda, salt, ginger, and cinnamon.
- In a separate bowl, cream butter and sugar until light.
- Add eggs one at a time, beating well after each addition.
- Mix in orange juice and zest.
- Gradually add dry ingredients to wet ingredients.
- Fold in chopped crystallized ginger.
- Pour batter into a greased cake pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store leftovers in an airtight container.
- This cake can be made a day in advance.
- Serve with whipped cream for added flavor.
