- 2–3 lbs pork loin
- 2 cups fresh cranberries
- 1 cup sugar
- 1 cup water
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon rosemary
- 1 teaspoon thyme
Instructions
- Preheat the oven to 375°F (190°C).
- Season the pork loin with olive oil, salt, pepper, rosemary, and thyme.
- Place the pork in a roasting pan.
- In a saucepan, combine cranberries, sugar, and water. Cook until cranberries burst.
- Pour cranberry sauce over the pork loin.
- Roast for 1 hour or until the internal temperature reaches 145°F (63°C).
- Let the pork rest for 10 minutes before slicing.
- Serve with additional cranberry sauce on the side.
