Ingredients

- 200g raisins
- 200g sultanas
- 100g currants
- 100g chopped mixed peel
- 150g brown sugar
- 100g breadcrumbs
- 100g plain flour
- 1 tsp mixed spice
- 1 tsp baking powder
- 2 large eggs
- 150ml milk
- 50ml brandy
Instructions
- Preheat the steamer or a large pot with water.
- In a large bowl, combine all dried fruits and mixed peel.
- Add brown sugar, breadcrumbs, flour, mixed spice, and baking powder.
- Beat the eggs and then stir in milk and brandy.
- Mix wet ingredients into the dry ingredients until well combined.
- Transfer the mixture to a greased pudding basin.
- Cover the basin with parchment paper and foil.
- Steam for 6 hours, adding water as necessary.
- Let it cool and store in a cool place until serving.
- Reheat by steaming for 2 hours before serving.
