  • 100g chopped mixed peel
  • 150g brown sugar
  • 100g breadcrumbs
  • 100g plain flour
  • 1 tsp mixed spice
  • 1 tsp baking powder
  • 2 large eggs
  • 150ml milk
  • 50ml brandy

Instructions

  1. Preheat the steamer or a large pot with water.
  2. In a large bowl, combine all dried fruits and mixed peel.
  3. Add brown sugar, breadcrumbs, flour, mixed spice, and baking powder.
  4. Beat the eggs and then stir in milk and brandy.
  5. Mix wet ingredients into the dry ingredients until well combined.
  6. Transfer the mixture to a greased pudding basin.
  7. Cover the basin with parchment paper and foil.
  8. Steam for 6 hours, adding water as necessary.
  9. Let it cool and store in a cool place until serving.
  10. Reheat by steaming for 2 hours before serving.
