A festive salad featuring quinoa, cranberries, and seasonal vegetables.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup fresh cranberries
- 1/2 cup chopped celery
- 1/2 cup diced red bell pepper
- 1/4 cup chopped green onions
- 1/4 cup chopped parsley
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- Combine quinoa and water in a pot. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let it sit for 5 minutes.
- Fluff quinoa with a fork.
- In a large bowl, mix quinoa with cranberries, celery, bell pepper, green onions, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over the salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Adjust sweetness by adding more or fewer cranberries.
- Serve chilled or at room temperature.
- This salad can be made a day in advance.
