A delicious Christmas Raspberry Tart with a buttery crust and sweet raspberry filling.
Ingredients

- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, softened
- ½ cup powdered sugar
- 1 egg yolk
- 2 cups fresh raspberries
- ½ cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, butter, and powdered sugar until crumbly.
- Add egg yolk and mix until dough forms.
- Press dough into a tart pan and bake for 15 minutes.
- In another bowl, combine raspberries, granulated sugar, cornstarch, vanilla, and lemon juice.
- Pour raspberry mixture into the baked crust.
- Bake for an additional 25 minutes.
- Let cool before serving.

- Use fresh raspberries for best flavor.
- Serve with whipped cream if desired.
