Ingredients

- 3 medium beets
- 2 cups mixed greens
- 1/2 cup goat cheese, crumbled
- 1/4 cup walnuts, chopped
- 1/4 cup balsamic vinaigrette

Instructions
- Preheat the oven to 400°F (200°C).
- Wrap beets in foil and roast for 45-60 minutes until tender.
- Let the beets cool, then peel and slice them.
- In a large bowl, combine mixed greens, beets, goat cheese, and walnuts.
- Drizzle with balsamic vinaigrette and toss gently.
