Ingredients

  • 1/2 cup walnuts, toasted
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons balsamic vinegar

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the butternut squash with olive oil, salt, and pepper.
  3. Spread the squash on a baking sheet and roast for 25-30 minutes.
  4. In a large bowl, combine the mixed greens, cranberries, walnuts, and feta.
  5. Add the roasted butternut squash to the salad.
  6. Drizzle with balsamic vinegar before serving.
