Description

A festive chocolate roulade filled with cream and berries.


Ingredients

Scale
  • 4 large eggs
  • 100g granulated sugar
  • 75g all-purpose flour
  • 25g cocoa powder
  • 200ml heavy cream
  • 150g mixed berries
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Whisk eggs and sugar until thick and pale.
  3. Sift in flour and cocoa powder, fold gently.
  4. Spread the mixture onto a lined baking tray.
  5. Bake for 10-12 minutes until firm.
  6. Turn the cake onto a damp towel, remove the paper.
  7. Roll it up while warm and let it cool.
  8. Whip the cream and fold in the berries.
  9. Unroll the cake, spread the cream mixture, and roll it up again.
  10. Dust with powdered sugar before serving.

  • Store in the fridge for up to 3 days.
  • Use any berries of your choice.
