Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 cup ground turkey
  • 1/2 cup diced tomatoes
  • 1/2 cup corn
  • 1/2 cup black beans
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a skillet, cook ground turkey until browned.
  4. Add cooked rice, tomatoes, corn, black beans, cumin, chili powder, salt, and pepper to the skillet.
  5. Mix well and cook for 5 minutes.
  6. Stuff the mixture into each pepper.
  7. Place stuffed peppers in a baking dish and top with cheese.
  8. Bake for 30 minutes or until peppers are tender.

  • Use any color of bell peppers.
  • Feel free to add other vegetables.
