Stuffed peppers filled with festive ingredients for a holiday twist.
Ingredients

- 4 large bell peppers
- 1 cup cooked rice
- 1 cup ground turkey
- 1/2 cup diced tomatoes
- 1/2 cup corn
- 1/2 cup black beans
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 cup shredded cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- In a skillet, cook ground turkey until browned.
- Add cooked rice, tomatoes, corn, black beans, cumin, chili powder, salt, and pepper to the skillet.
- Mix well and cook for 5 minutes.
- Stuff the mixture into each pepper.
- Place stuffed peppers in a baking dish and top with cheese.
- Bake for 30 minutes or until peppers are tender.
Notes
- Use any color of bell peppers.
- Feel free to add other vegetables.
- Can be made ahead and reheated.
