Ingredients

  • 4 cups mashed sweet potatoes
  • 1 cup sugar
  • 1/2 cup milk
  • 1/2 cup butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup mini marshmallows
  • 1/2 cup brown sugar
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix mashed sweet potatoes, sugar, milk, butter, eggs, vanilla, and salt.
  3. Spread the mixture into a greased baking dish.
  4. In a separate bowl, mix brown sugar and chopped pecans.
  5. Sprinkle the pecan mixture on top of the sweet potato mixture.
  6. Top with mini marshmallows.
  7. Bake for 30-35 minutes until heated through and marshmallows are golden brown.
