Ingredients

  • 500g mixed mushrooms, chopped
  • 200g spinach
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, grated
  • 100g walnuts, chopped
  • 2 teaspoons thyme
  • 2 teaspoons rosemary
  • 1 tablespoon olive oil
  • 1 sheet puff pastry
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Heat olive oil in a pan and sauté onion and garlic until soft.
  3. Add mushrooms, carrot, and spinach; cook until vegetables are tender.
  4. Stir in walnuts, thyme, and rosemary; mix well.
  5. Roll out puff pastry on a floured surface.
  6. Place the vegetable mixture in the center of the pastry.
  7. Fold the pastry over the filling and seal the edges.
  8. Brush the top with beaten egg.
  9. Bake for 25-30 minutes until golden brown.

Notes
