- 500g mixed mushrooms, chopped
- 200g spinach
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, grated
- 100g walnuts, chopped
- 2 teaspoons thyme
- 2 teaspoons rosemary
- 1 tablespoon olive oil
- 1 sheet puff pastry
- 1 egg (for egg wash)
Instructions
- Preheat your oven to 200°C (400°F).
- Heat olive oil in a pan and sauté onion and garlic until soft.
- Add mushrooms, carrot, and spinach; cook until vegetables are tender.
- Stir in walnuts, thyme, and rosemary; mix well.
- Roll out puff pastry on a floured surface.
- Place the vegetable mixture in the center of the pastry.
- Fold the pastry over the filling and seal the edges.
- Brush the top with beaten egg.
- Bake for 25-30 minutes until golden brown.
Notes
- Serve with a side of gravy or cranberry sauce.
- Can be made vegan by using plant-based milk for egg wash.
