Ingredients

- 2 lbs chuck roast
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup beef broth
- 8 small corn tortillas
- 1 cup diced tomatoes
- 1 cup chopped lettuce
- 1/2 cup shredded cheese
- 1/4 cup sour cream
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic; sauté until soft.
- Season the chuck roast with chili powder, cumin, salt, and pepper.
- Brown the roast on all sides in the pot.
- Add beef broth; bring to a boil.
- Reduce heat, cover, and simmer for 2-3 hours until tender.
- Remove roast; shred the meat with forks.
- Warm tortillas in a skillet.
- Fill tortillas with shredded beef, tomatoes, lettuce, and cheese.
- Top with sour cream before serving.
