- 1 lb flank steak
- 1/4 cup lime juice
- 1/4 cup olive oil
- 1/4 cup chopped cilantro
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 2 cups cooked rice
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1 cup corn
- 1/2 cup black beans, rinsed and drained
Instructions
- In a bowl, mix lime juice, olive oil, cilantro, garlic, cumin, chili powder, salt, and pepper.
- Marinate the flank steak in the mixture for at least 30 minutes.
- Grill the steak over medium-high heat for about 6-8 minutes per side, or until desired doneness.
- Let the steak rest for 5 minutes before slicing.
- In bowls, layer cooked rice, sliced steak, cherry tomatoes, avocado, corn, and black beans.
- Drizzle with extra lime juice and cilantro if desired.
