Instructions
1. Prepare the Dough
– In a medium bowl, whisk together flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.
– In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, mixing until combined.
2. Combine Ingredients
– Gradually add the dry ingredients to the wet ingredients, mixing just until combined. If using cinnamon chips or nuts, fold them into the dough.
3. Chill the Dough
– Cover the dough and refrigerate for at least 30 minutes. This helps the cookies maintain their shape while baking.
4. Preheat and Prepare
– Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
– In a small bowl, mix the cinnamon and sugar for the coating.
5. Shape and Coat
– Roll the dough into 1-inch balls. Roll each ball in the cinnamon-sugar mixture until fully coated. Place them on the prepared baking sheet, about 2 inches apart.
6. Bake
– Bake for 10-12 minutes or until the edges are set and slightly golden. The centers should still be soft.
– Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
– For chewier cookies, slightly underbake them.
– Add a glaze made of powdered sugar, milk, and a dash of cinnamon for extra sweetness.
