Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, cubed
  • 1 cup onions, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides.
  3. Remove beef and set aside.
  4. Add onions and garlic to the pot. Sauté until soft.
  5. Stir in tomato paste, Worcestershire sauce, thyme, and rosemary.
  6. Add beef back to the pot along with beef broth.
  7. Bring to a boil, then reduce heat and simmer for 1 hour.
  8. Add carrots and potatoes. Cook for another 30-40 minutes until vegetables are tender.
  9. Season with salt and pepper to taste.
