A hearty classic beef stew recipe filled with tender meat and vegetables.
Ingredients

- 2 lbs beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 2 cups carrots, sliced
- 2 cups potatoes, cubed
- 1 cup onions, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides.
- Remove beef and set aside.
- Add onions and garlic to the pot. Sauté until soft.
- Stir in tomato paste, Worcestershire sauce, thyme, and rosemary.
- Add beef back to the pot along with beef broth.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Add carrots and potatoes. Cook for another 30-40 minutes until vegetables are tender.
- Season with salt and pepper to taste.
Notes
- For best flavor, let the stew sit overnight in the fridge.
- Serve with crusty bread.
