Description
Classic Bran Muffins are a wholesome breakfast option made with wheat bran, offering a moist texture and a healthy dose of fiber, perfect for any time of the day.
Ingredients
Scale
- 1 1/2 cups wheat bran
- 1 cup buttermilk
- 1/3 cup vegetable oil
- 1 egg
- 2/3 cup light brown sugar
- 1/2 teaspoon vanilla extract
- 1 cup white whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Optional: 1/2 cup raisins, chopped nuts, or chocolate chips
Instructions
- Preheat the oven to 375°F (190°C) and prepare a 12-cup muffin tin by spraying it with nonstick spray or using paper liners.
- In a medium bowl, combine wheat bran and buttermilk, mixing well and letting it sit for 10 minutes.
- In a separate bowl, whisk together vegetable oil, egg, light brown sugar, and vanilla extract until smooth.
- Mix the soaked wheat bran into the wet ingredients until well combined.
- In another bowl, whisk together the white whole wheat flour, baking soda, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until just combined. Avoid overmixing.
- Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
- Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
- For a dairy-free version, substitute buttermilk with a plant-based milk and a splash of vinegar.
- For added moisture, incorporate applesauce or yogurt into the batter.
- Be careful not to overmix the batter, which could result in dense muffins.
- Ensure the muffins cool slightly in the pan before transferring them to a rack to prevent sogginess.
