A classic French onion soup with rich flavors and a cheesy topping.
Ingredients

- 4 large onions, thinly sliced
- 4 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon sugar
- 8 cups beef broth
- 1/2 cup dry white wine
- 1 teaspoon thyme
- 1 bay leaf
- 1 baguette, sliced
- 2 cups grated Gruyere cheese
Instructions
- Melt butter and olive oil in a large pot over medium heat.
- Add onions, salt, and sugar. Cook until onions are caramelized, about 25 minutes.
- Stir in wine, thyme, and bay leaf. Simmer for 10 minutes.
- Add beef broth and bring to a boil. Reduce heat and simmer for 30 minutes.
- Preheat the oven to 400°F (200°C).
- Toast baguette slices until golden brown.
- Serve soup in bowls, top with toasted baguette slices and cheese.
- Bake until cheese is bubbly, about 10 minutes.
Notes
- Adjust seasoning to taste.
- Use low-sodium broth if preferred.
- Can use vegetable broth for a vegetarian version.
