  • 8 slices of baguette
  • 2 cups grated Gruyère cheese

Instructions

  1. Melt butter and olive oil in a large pot over medium heat.
  2. Add sliced onions and sugar, cook until onions are caramelized, about 30 minutes.
  3. Pour in wine and cook for 5 minutes, scraping the bottom.
  4. Add beef broth, thyme, bay leaf, salt, and pepper. Simmer for 30 minutes.
  5. Preheat oven to broil.
  6. Toast baguette slices until golden brown.
  7. Remove bay leaf from soup and ladle into oven-safe bowls.
  8. Top each bowl with a slice of toasted baguette and sprinkle with cheese.
  9. Broil until cheese is bubbly and golden, about 3-5 minutes.
  10. Serve hot.
