- 4 large onions, thinly sliced
- 4 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 8 cups beef broth
- 1/2 cup dry white wine
- 1 teaspoon thyme
- 1 bay leaf
- Salt to taste
- Black pepper to taste
- 8 slices of baguette
- 2 cups grated Gruyère cheese
Instructions
- Melt butter and olive oil in a large pot over medium heat.
- Add sliced onions and sugar, cook until onions are caramelized, about 30 minutes.
- Pour in wine and cook for 5 minutes, scraping the bottom.
- Add beef broth, thyme, bay leaf, salt, and pepper. Simmer for 30 minutes.
- Preheat oven to broil.
- Toast baguette slices until golden brown.
- Remove bay leaf from soup and ladle into oven-safe bowls.
- Top each bowl with a slice of toasted baguette and sprinkle with cheese.
- Broil until cheese is bubbly and golden, about 3-5 minutes.
- Serve hot.
Notes
- Use a good quality beef broth for the best flavor.
- Gruyère cheese can be substituted with Swiss cheese.
- Garnish with fresh thyme if desired.
