  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (200g) brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup (60g) chopped nuts (walnuts or pecans) for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a bowl, combine the chopped dates and boiling water. Stir in the baking soda and let it sit for 10-15 minutes.
  3. Cream together the softened butter and brown sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs, one at a time, then mix in the vanilla extract.
  5. In a separate bowl, whisk together the flour, ground cloves, ground cinnamon, and salt.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the date mixture. Start and end with the flour mixture, mixing until just combined.
  7. Pour the batter into the prepared cake pan, smoothing the top, and sprinkle the chopped nuts over the top.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  10. Serve the cake at room temperature, plain or with whipped cream.
