- 1 cup (200g) pitted dates, chopped
- 1 cup (240ml) boiling water
- 1 teaspoon baking soda
- 1/2 cup (115g) unsalted butter, softened
- 1 cup (200g) brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 teaspoon ground cloves
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup (60g) chopped nuts (walnuts or pecans) for topping
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- In a bowl, combine the chopped dates and boiling water. Stir in the baking soda and let it sit for 10-15 minutes.
- Cream together the softened butter and brown sugar until light and fluffy, about 3-4 minutes.
- Beat in the eggs, one at a time, then mix in the vanilla extract.
- In a separate bowl, whisk together the flour, ground cloves, ground cinnamon, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the date mixture. Start and end with the flour mixture, mixing until just combined.
- Pour the batter into the prepared cake pan, smoothing the top, and sprinkle the chopped nuts over the top.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Serve the cake at room temperature, plain or with whipped cream.
Notes
- For added flavor, soak the dates in rum or orange juice instead of water.
- This cake can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
- It also freezes well; wrap tightly in plastic wrap and foil before freezing.
