Ingredients

  • All-purpose flour – 2 cups (240 g)
  • Baking soda – 1 teaspoon
  • Ground cloves – 1 teaspoon
  • Ground cinnamon – 1 teaspoon
  • Ground ginger – 1 teaspoon
  • Salt – 1/2 teaspoon
  • Unsalted butter – 1/2 cup (113 g), softened
  • Brown sugar – 1 cup (200 g), packed
  • Molasses – 1/2 cup (120 ml)
  • Eggs – 2 large
  • Milk – 1/2 cup (120 ml)
  • Granulated sugar – 2 tablespoons (for topping, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch (23×13 cm) loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, ground cloves, ground cinnamon, ground ginger, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter and brown sugar together using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  4. Add the molasses to the butter-sugar mixture and mix until well combined. Then, add the eggs one at a time, mixing well after each addition.
  5. Gradually add the dry ingredient mixture to the wet ingredients, alternating with the milk. Start and end with the dry ingredients, mixing until just combined.
  6. Pour the batter into the prepared loaf pan. Optionally, sprinkle granulated sugar on top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once baked, let the loaf cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
  9. Slice the loaf and serve plain or with butter.

  • Consider adding chopped nuts or raisins for extra flavor.
  • Store leftovers in an airtight container at room temperature for up to 3 days or freeze for longer storage.
