Description

A delightful twist on the classic club sandwich, combining turkey, bacon, and fresh vegetables with rotini pasta.


Ingredients

  • Rotini pasta: 8 oz (about 225 g)
  • Diced turkey: 1 cup (about 150 g)
  • Crispy bacon: 6 slices, cooked and crumbled
  • Cherry tomatoes: 1 cup, halved
  • Shredded lettuce: 2 cups
  • Cheddar cheese: 1 cup, shredded
  • Mayonnaise: 1/2 cup
  • Mustard: 2 tablespoons
  • Salt and pepper: to taste

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente, about 8 to 10 minutes. Drain and rinse under cold water.
  2. Prepare the vegetables by halving the cherry tomatoes and shredding the lettuce.
  3. In a large mixing bowl, combine the cooled rotini pasta, diced turkey, crumbled bacon, halved cherry tomatoes, and shredded lettuce. Add shredded cheddar cheese.
  4. In a small bowl, mix mayonnaise and mustard until smooth. Season with salt and pepper.
  5. Pour the dressing over the pasta mixture and toss gently. Cover and refrigerate for at least 30 minutes before serving.
