A delightful twist on the classic club sandwich, combining turkey, bacon, and fresh vegetables with rotini pasta.
Ingredients
- Rotini pasta: 8 oz (about 225 g)
- Diced turkey: 1 cup (about 150 g)
- Crispy bacon: 6 slices, cooked and crumbled
- Cherry tomatoes: 1 cup, halved
- Shredded lettuce: 2 cups
- Cheddar cheese: 1 cup, shredded
- Mayonnaise: 1/2 cup
- Mustard: 2 tablespoons
- Salt and pepper: to taste
Instructions
- Cook the rotini pasta in salted boiling water until al dente, about 8 to 10 minutes. Drain and rinse under cold water.
- Prepare the vegetables by halving the cherry tomatoes and shredding the lettuce.
- In a large mixing bowl, combine the cooled rotini pasta, diced turkey, crumbled bacon, halved cherry tomatoes, and shredded lettuce. Add shredded cheddar cheese.
- In a small bowl, mix mayonnaise and mustard until smooth. Season with salt and pepper.
- Pour the dressing over the pasta mixture and toss gently. Cover and refrigerate for at least 30 minutes before serving.
