- 1 and 1/3 cups (265g) granulated sugar (divided)
- 2 large eggs
- 1 large egg yolk
- 2 teaspoons vanilla extract (optional, but recommended)
- 3/4 cup (128g) chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper.
- In a medium-sized bowl, combine the all-purpose flour, baking powder, salt, unsweetened cocoa powder, and espresso powder (if using). Whisk until well-blended.
- In a saucepan, melt the unsalted butter and oil together over low heat. Once melted, remove from heat and stir in 1 cup of granulated sugar. Add the eggs, egg yolk, and vanilla extract, and whisk until smooth.
- Gradually add the dry ingredient mixture into the wet mixture, stirring until just combined. Fold in the chocolate chips.
- Pour the brownie batter into the prepared pan, spreading evenly.
- Bake for 20-25 minutes. To check for doneness, insert a toothpick into the center—if it comes out with a few moist crumbs, the brownies are done. Let them cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
