Ingredients

Instructions

  1. Rinse the jasmine rice under cold water.
  2. In a pot, combine rice and coconut milk. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. In a skillet, heat olive oil over medium heat.
  5. Add garlic and ginger, sauté for 1 minute.
  6. Add diced chicken, soy sauce, salt, and pepper. Cook until chicken is done.
  7. Fluff the rice and serve topped with chicken.
  8. Garnish with green onions and cilantro.
