- 2 cups jasmine rice
- 1 can (13.5 oz) coconut milk
- 2 cups chicken broth
- 1 lb chicken thighs, boneless and skinless
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a pot, combine the rice, coconut milk, chicken broth, and a pinch of salt. Bring to a boil.
- Reduce heat, cover, and simmer for 15-20 minutes until rice is cooked.
- While rice cooks, heat vegetable oil in a skillet over medium heat.
- Add garlic and ginger, and sauté until fragrant.
- Add chicken thighs and soy sauce, cooking until chicken is browned and cooked through.
- Slice the chicken and serve over coconut rice.
- Garnish with fresh cilantro.
