Ingredients

  • 1 can (13.5 oz) coconut milk
  • 2 cups chicken broth
  • 1 lb chicken thighs, boneless and skinless
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, combine the rice, coconut milk, chicken broth, and a pinch of salt. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15-20 minutes until rice is cooked.
  4. While rice cooks, heat vegetable oil in a skillet over medium heat.
  5. Add garlic and ginger, and sauté until fragrant.
  6. Add chicken thighs and soy sauce, cooking until chicken is browned and cooked through.
  7. Slice the chicken and serve over coconut rice.
  8. Garnish with fresh cilantro.
