Ingredients

- 1 pre-baked pie crust
- 1 cup coconut cream
- 1 cup milk
- 3/4 cup sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 4 egg yolks
- 1 teaspoon vanilla extract
- 1 cup shredded coconut
- Whipped cream for topping
Instructions
- In a saucepan, combine coconut cream, milk, sugar, cornstarch, and salt.
- Heat the mixture over medium heat, stirring constantly until it thickens.
- In a bowl, whisk the egg yolks.
- Slowly add some of the hot mixture to the egg yolks, whisking constantly.
- Pour the egg yolk mixture back into the saucepan and cook for 2 more minutes.
- Remove from heat and stir in vanilla extract and shredded coconut.
- Pour the filling into the pre-baked pie crust.
- Chill in the refrigerator for at least 4 hours.
- Top with whipped cream before serving.
Notes
- Use fresh coconut for better flavor.
- Store leftovers in the refrigerator.
- Can be garnished with additional shredded coconut.
