Ingredients

  • 1 pre-baked pie crust
  • 1 cup coconut cream
  • 1 cup milk
  • 3/4 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 4 egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut
  • Whipped cream for topping

Instructions

  1. In a saucepan, combine coconut cream, milk, sugar, cornstarch, and salt.
  2. Heat the mixture over medium heat, stirring constantly until it thickens.
  3. In a bowl, whisk the egg yolks.
  4. Slowly add some of the hot mixture to the egg yolks, whisking constantly.
  5. Pour the egg yolk mixture back into the saucepan and cook for 2 more minutes.
  6. Remove from heat and stir in vanilla extract and shredded coconut.
  7. Pour the filling into the pre-baked pie crust.
  8. Chill in the refrigerator for at least 4 hours.
  9. Top with whipped cream before serving.

  • Use fresh coconut for better flavor.
  • Store leftovers in the refrigerator.
