Description
Coconut Turmeric Rice is a flavorful side dish made with rice, coconut milk, and turmeric.
Ingredients

- 1 cup jasmine rice
- 1 can (13.5 oz) coconut milk
- 1 cup water
- 1 teaspoon turmeric powder
- 1/2 teaspoon salt
- 1 tablespoon olive oil
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a pot, combine the coconut milk, water, turmeric, and salt.
- Add the rinsed rice and olive oil to the pot.
- Bring the mixture to a boil over medium heat.
- Reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked.
- Remove from heat and let it sit for 5 minutes. Fluff with a fork before serving.
Notes
- Adjust the amount of turmeric to taste.
- Serve with grilled chicken or vegetables.
- Store leftovers in an airtight container in the fridge.
