A rich and creamy coffee cheesecake with a graham cracker crust.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 1 tablespoon instant coffee granules
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix the graham cracker crumbs and melted butter.
- Press the mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in sour cream, instant coffee, and vanilla extract.
- Pour the batter over the crust.
- Bake for 50-60 minutes until set.
- Let it cool, then refrigerate for at least 4 hours before serving.
Notes
- For a stronger coffee flavor, increase the amount of instant coffee.
- Serve with whipped cream or chocolate drizzle if desired.
