Ingredients

- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt to taste
- Pepper to taste
- 2 tablespoons butter
- Chives for garnish
Instructions
- Melt butter in a large pot over medium heat.
- Add onion and garlic. Sauté until soft.
- Stir in diced potatoes and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Blend the soup until smooth.
- Stir in heavy cream, salt, and pepper.
- Heat through and serve with chives on top.
Notes
- You can use chicken broth for a different flavor.
- For a vegan version, substitute heavy cream with coconut milk.
