Description

Coq au vin is a classic French dish of chicken braised with wine, lardons, mushrooms, and onions.


Ingredients

  • 1 whole chicken, cut into pieces
  • 4 cups red wine
  • 1 cup chicken broth
  • 200g lardons or bacon, diced
  • 250g mushrooms, sliced
  • 2 medium onions, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken in wine for at least 2 hours, preferably overnight.
  2. Remove chicken from the marinade and pat dry.
  3. In a large pot, cook lardons until crispy. Remove and set aside.
  4. In the same pot, brown the chicken on all sides. Remove and set aside.
  5. Add onions and mushrooms to the pot, cook until softened.
  6. Add garlic, tomato paste, thyme, and bay leaves. Stir for 1 minute.
  7. Return chicken and lardons to the pot. Pour in the marinade and chicken broth.
  8. Bring to a boil, then reduce heat. Cover and simmer for 1.5 hours.
  9. Season with salt and pepper. Serve hot.

  • Serve with crusty bread.
  • Pair with a similar red wine.
  • Can be made a day ahead for better flavor.
