Ingredients
- 2 1/4 cups all-purpose flour (280g)
- 1 cup unsalted butter, softened (227g)
- 3/4 cup granulated sugar (150g)
- 3 large eggs (150g)
- 1 cup cottage cheese (full-fat) (240g)
- 1 teaspoon vanilla extract (5ml)
- 1/2 teaspoon baking powder (2g)
- 1/4 teaspoon salt (1g)
- 1/2 cup honey (120g) (optional for added sweetness)
- Fresh fruit (optional for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a 9-inch cake pan with parchment paper. Set aside.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, whisk the cottage cheese, sugar, eggs, and vanilla extract until smooth. The cottage cheese may have a lumpy texture, but that’s perfectly fine.
- Gradually add the dry ingredients to the wet ingredients, stirring just until combined. The batter will be slightly lumpy, but that’s normal for a cottage cheese cake.
- Fold in the softened butter and mix until fully incorporated.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 40-45 minutes, or until the top is golden brown and the cake is firm to the touch. It should spring back when lightly pressed.
- Let the cake cool completely before removing it from the pan. Slice and serve.
- Optionally, top with fresh fruit, whipped cream, or a drizzle of honey for added flavor.
Notes
- If you prefer a sweeter cake, feel free to add more honey or sugar to the batter.
- You can experiment with different fruits such as berries, peaches, or apricots for topping.
- The cottage cheese should be fully drained to prevent the cake from being too wet.
- For an extra creamy texture, you can blend the cottage cheese before adding it to the batter.
