Instructions

  • Preheat your oven to 350°F (175°C). Grease and line a 9-inch cake pan with parchment paper. Set aside.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large bowl, whisk the cottage cheese, sugar, eggs, and vanilla extract until smooth. The cottage cheese may have a lumpy texture, but that’s perfectly fine.
