Ingredients
– For the crust (optional if using store-bought):
– 1 ½ cups all-purpose flour
– ½ cup cold butter, cubed
– ¼ cup ice water
– For the filling:
– 2 cups cottage cheese (preferably full-fat for creaminess)
– ¾ cup granulated sugar (or sweetener of your choice)
– 3 large eggs
– 1 tsp vanilla extract
– Zest of 1 lemon (for freshness)
– 1 pinch of salt (to enhance the flavors)
Optional Additions:
– Fresh fruits (blueberries, raspberries, etc.)
– Ground cinnamon or nutmeg
– Chocolate chips or honey for added sweetness
Instructions
1. Prepare the Crust (if making from scratch):
– In a mixing bowl, combine the flour and cold, cubed butter. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
– Add the ice water a tablespoon at a time until the dough just comes together. Avoid overmixing.
– Roll the dough out on a lightly floured surface to fit into a 9-inch pie dish. Press the dough into the edges and prick the base with a fork to prevent bubbles during baking.
– Tip: If you’re short on time, you can use a store-bought pie crust instead.
2. Prepare the Filling:
– In a large mixing bowl, combine the cottage cheese, sugar, eggs, vanilla extract, lemon zest, and a pinch of salt.
– Use a whisk or an immersion blender to mix until smooth. If you prefer a smoother filling, you can blend the cottage cheese before adding the other ingredients.
– Optional: Add your favorite mix-ins, such as fresh berries, a dash of cinnamon, or chocolate chips, and stir them in gently.
3. Assemble and Bake:
– Preheat the oven to 350°F (175°C).
– Pour the cottage cheese filling into the prepared pie crust and smooth the top with a spatula.
– Bake for 40-50 minutes, or until the edges are lightly golden and the center is set with a slight jiggle (it will firm up as it cools).
– Tip: If the edges start to brown too quickly, cover them with aluminum foil.
4. Cool and Serve:
– Once baked, remove the pie from the oven and allow it to cool for at least an hour before slicing.
– You can serve it chilled or at room temperature.

Notes
– Refrigeration: Cover the pie with plastic wrap or foil and refrigerate. It will stay fresh for up to 4 days.
