Ingredients

- 12 oz rigatoni pasta
- 2 cups cottage cheese
- 1 cup grated Parmesan cheese
- 1 cup marinara sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Cook rigatoni according to package instructions.
- In a skillet, heat olive oil and sauté garlic until fragrant.
- Add marinara sauce to the skillet and simmer for 5 minutes.
- In a bowl, combine cottage cheese, Parmesan, salt, and pepper.
- Drain rigatoni and mix with the sauce.
- Add the cottage cheese mixture and stir well.
- Serve hot, garnished with additional Parmesan if desired.
Notes
- Adjust seasoning to taste.
- Can add vegetables like spinach or mushrooms.
- Leftovers can be stored in the fridge for up to 3 days.
