Ingredients

  • 1 1/4 cups boiling water
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine couscous and boiling water.
  2. Cover and let sit for 5 minutes.
  3. Fluff couscous with a fork.
  4. Add cucumber, bell pepper, tomatoes, red onion, and parsley.
  5. In a separate bowl, whisk olive oil and lemon juice.
  6. Pour dressing over salad and mix well.
  7. Season with salt and pepper.
  8. Serve chilled or at room temperature.
