Ingredients

- 1 lb ground beef
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) black beans, drained
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 2 cups shredded cheese
- 1 cup sour cream
- 1 cup milk
- 3 cups tater tots
Instructions
- Preheat your oven to 350°F.
- In a large skillet, cook ground beef over medium heat until browned.
- Add kidney beans, black beans, corn, diced tomatoes, and taco seasoning to the skillet. Stir well.
- In a separate bowl, mix sour cream and milk until smooth.
- Combine the beef mixture with the sour cream mixture.
- Spread the mixture in a greased baking dish.
- Top with tater tots and shredded cheese.
- Bake for 30-35 minutes until the cheese is bubbly and tater tots are golden.
Notes
- Feel free to add more vegetables like bell peppers or onions.
- Use turkey or chicken for a leaner option.
- Store leftovers in the refrigerator for up to 3 days.
