Ingredients

  • 1 lb ground beef
  • 1 cup breadcrumbs
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup milk
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup barbecue sauce
  • 4 cups potatoes, peeled and sliced
  • 1 cup cheese, shredded
  • 1/2 cup sour cream
  • 1/4 cup butter

Instructions

  1. Preheat oven to 350°F.
  2. In a bowl, combine ground beef, breadcrumbs, onion, garlic, milk, egg, salt, pepper, and half of the barbecue sauce.
  3. Shape the mixture into a loaf and place in a baking dish.
  4. Spread the remaining barbecue sauce on top of the meatloaf.
  5. In another bowl, mix potatoes, cheese, sour cream, and butter.
  6. Spread the potato mixture over the meatloaf.
  7. Bake for 1 hour or until meatloaf is cooked through.

Notes

  • Let the meatloaf rest for 10 minutes before slicing.
  • Use leftover meatloaf for sandwiches.
