Description
A hearty cowboy meatloaf served with creamy potato casserole.
Ingredients

- 1 lb ground beef
- 1 cup breadcrumbs
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1/4 cup milk
- 1 egg
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 cup barbecue sauce
- 4 cups potatoes, peeled and sliced
- 1 cup cheese, shredded
- 1/2 cup sour cream
- 1/4 cup butter
Instructions
- Preheat oven to 350°F.
- In a bowl, combine ground beef, breadcrumbs, onion, garlic, milk, egg, salt, pepper, and half of the barbecue sauce.
- Shape the mixture into a loaf and place in a baking dish.
- Spread the remaining barbecue sauce on top of the meatloaf.
- In another bowl, mix potatoes, cheese, sour cream, and butter.
- Spread the potato mixture over the meatloaf.
- Bake for 1 hour or until meatloaf is cooked through.
Notes
- Let the meatloaf rest for 10 minutes before slicing.
- Use leftover meatloaf for sandwiches.
- Adjust seasoning to your taste.
