A creamy and tangy cranberry cheesecake with a buttery crust.

- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 2 cups fresh cranberries
- 1/4 cup orange juice
- 1/4 cup sugar (for cranberry topping)
Instructions
- Preheat your oven to 325°F (160°C).
- Mix graham cracker crumbs and melted butter in a bowl.
- Press the mixture into the bottom of a 9-inch springform pan.
- In a mixer, beat cream cheese and 1 cup sugar until smooth.
- Add vanilla extract and eggs, one at a time, mixing well after each.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake for 55-60 minutes until the center is set.
- While cheesecake bakes, prepare cranberry topping by simmering cranberries, orange juice, and 1/4 cup sugar in a saucepan until cranberries burst.
- Let cheesecake cool, then spread cranberry topping over the top.
- Chill in the refrigerator for at least 4 hours before serving.
Notes
- Store leftovers in the refrigerator.
- Use fresh cranberries for best results.
- Allow cheesecake to cool completely before adding topping.
