Ingredients

- 2 cups vegetable broth

- 1 orange, zested and juiced

Instructions
- Heat olive oil in a pot over medium heat.
- Add diced onion and sauté until translucent.
- Stir in the rice and cook for 2 minutes.
- Add vegetable broth, cranberries, orange zest, and orange juice.
- Bring to a boil, then reduce heat and cover.
- Simmer for 18-20 minutes until rice is cooked.
- Fluff rice with a fork and season with salt and pepper.
